Dad and I have always shared a love of peanut butter, a passion Mum could never understand. He has been known to scoop it straight out of the pot with a teaspoon; I like to spread it on celery sticks and convince myself I'm having a healthy snack. And now, much to my husband's bewilderment, my children have inherited this love of peanut butter - the crunchier the better.

I don't think I've ever cooked using peanut butter, though I know it's great for satay sauce. I love the combination of peanut butter with the savoury-sweetness of oyster sauce in this dish. 

It's ready in next to no time, with no need to marinade the beef. I was lucky to pick up a couple of Aberdeen Angus beef fillets, but any good-quality beef will do the trick. I've made this dish using green beans (pictured), which add a splash of colour and soak up the sauce nicely. However, Dad and I used green peppers the other night, which added extra crunch and a slightly bitter taste that counters the sweetness of the peanut butter. Both work in different ways, so pick whichever you have to hand and enjoy! 

BEEF STIRY-FRY WITH PEANUT BUTTER AND OYSTER SAUCE

Ingredients (Serves 4)

300g Aberdeen Angus beef fillets, cut into strips
200g green beans or 1 green pepper, sliced
2 generous tbsps crunchy peanut butter 
2 tbsps oyster sauce
1 red onion, chopped
2 small cloves garlic, crushed
1 tsp ginger powder
Pinch of chili powder (or more, to taste)
Handful unsalted cashew nuts (optional)
Salt and pepper to taste

1) Boil or steam the green beans until they are almost cooked, drain and leave to the side.
2) Fry the onion, garlic and ginger powder in coconut oil (or olive oil) on a medium heat.
3) Add the beef strips and green beans, increase the heat and stir quickly to combine all the ingredients.
4) Add the chili powder and stir.
5) Add the peanut butter, oyster sauce and cashew nuts, reduce to a low heat and stir well until the beef is cooked. Careful not to overcook the beef to ensure it stays tender and juicy.
Serve with white rice.
